Russell’s Deli Garlic Potato Salad

3 lbs. Red Potatoes, diced into 1/4″ pieces, boiled and cooled

Blend the following ingredients in a food processor:
1/2 tsp Black Pepper
1/2 tsp Salt
1/2 tsp oregano
3 Tbsp Red Vinegar
6-10 cloves Garlic (or more for extra flavor)
1/4 cup Flat Italian Parsley
1/3 cup Olive Oil
1/3 cup Mayonnaise

Combine this with:
1/2 cup Sliced Olives
1/2 cup Diced Green Pepper
1/4 cup Diced Red Onion
1/4 cup Sliced Red Roasted Peppers

Add cooled potatoes and mix all ingredients in a large bowl. Make one day ahead for best flavor.

Yield: Approx. 4lbs.
